Pela, limpia y trocea la calabaza, los puerros, la zanahoria y la patata.
Añade el aceite a una cazuela, calienta y vete añadiendo las verduras. Rehoga durante 3 minutos.
Añade el caldo de verduras y salpimenta. Pon la tapa y deja cocer durante 20 minutos a fuego medio.
Mientras, ralla el queso parmesano y reserva en un cuenco.
Una vez la verdura esté cocida, tritura con la batidora hasta que la crema esté homogénea.
Sirve cada ración añadiendo un poco de parmesano rallado al final.
